Ingredients
- 1/2 white cabbage sliced in thin ribbons or grated
- 1 large carrot coarsely grated
- 1 large onion finely sliced
Dressing
- 2 tbsp mayonaise
- 1 fresh lime juice from 1 lime
- 3 tbsp buttermilk
- salt and pepper to taste
Garnish
- 1 bunch fresh koriander just the leaves, roughly chopped
- 1 pomegranate just the pips

Instructions
Making the salad
- Slice and grate all the veg.
- Mix the ingredients of your dressing. Taste and season to taste. Add more lime juice if needed.
- Mix the veg and the dressing thoroughly. Ideally, you let the salad stand in your fridge for 24 hours.
Just before serving
- Chop the koriander leaves. Mix half of the leaves through the salad.
- Place the salad on a large serving dish and sprinkle with the remaining koriander and pomegranate seeds.
